APPLE GINGERBREAD SNACK CAKES

This is a wonderful winter snack that is sure
to warm everyone’s heart. For a special treat,
serve with a dollop of yogurt.

¼ cup
canola oil

½ cup
applesauce

1 egg

¾ cup
molasses

1 cup
hot water

2 ½ cups
whole meal flour (available in health food
stores or use whole wheat)*

teaspoon ginger

teaspoons baking soda

tablespoon melted butter

apples, peeled, cored, thinly sliced

tablespoon cinnamon sugar
In a sauté
pan, melt the butter and cook the apples gently.
Grease a 9 inch by 12 inch cake pan. Layer the
apples in the bottom of the pan. Sprinkle the
cinnamon sugar over the top of the apples.
In a small
bowl, beat together the canola oil, applesauce,
egg, and molasses. Set aside. In a large bowl,
stir together the whole meal flour, cinnamon,
ginger and baking soda. Mix in the molasses
mixture, then stir in the one cup of hot water.
Pour the batter on top of the apples. Bake in
350 degree oven until a toothpick comes out
clean, about 30 – 40 minutes. Let cool on a
rack, then invert the cake onto a platter. Cut
the cake into 12 or 16 pieces.
Nutritional analysis per serving (12 pieces per
cake): 220 calories, 4 grams protein, 39
grams carbohydrates, 6 grams fat (0 grams trans
fat), 179 mg. sodium, 4 grams fiber.

per cake): 165 calories, 3 grams protein, 29
grams carbohydrates, 5 grams fat (0 grams trans
fat), 134 mg. sodium, 3 grams fiber.
* Whole meal
flour is made by grinding grain and contains the
germ and bran of the wheat. It can often be
purchased in health food stores, or you may
substitute whole-wheat flour.

Approximately 40 Lose and Win team members
braved the cold to hear Cheryl Wixson give
hints on preparing healthy Maine foods.
Lose and Win teams have completed week 6 of
the 10 week program in Hancock County to
lose weight and become healthier.
They have accumulated a loss of 2,408 pounds
which is equivalent to the weight of a 20
ft. male giraffe or one of the Budweiser
Clydsdale Horses.
The “Chunky Monkeys” from Hannafords in
Ellsworth were the top losers for week 6.
The “Livin’ Life Large Girls” came in second
and the “Be Moore-Weigh Less” team from the
Moore School and the “Trenton Taste Testers”
from the Trenton IGA store won the third
place honors.
It was also reported that a member of the
"Hip Huggers" who used this program to stop
smoking was still smoke free. |
